The salt flight
Every salt flight is curated to match your menu. As our menus change with the seasons, so do the salts we bring to the table, set out so every guest can season to taste. Here’s one we’ve served:
Rooibos infused
Earthy and gently sweet, a uniquely South African finishing salt.
Oak smoked
Warm wood smoke for grilled meats, vegetables and eggs.
Bird’s eye chilli
Sea salt and fiery chilli. Bright, spicy and full of heat.
Atlantic fleur de sel
Hand-harvested, light and crunchy with a clean finish.
Not all salt is equal
- Unrefined sea saltFleur de sel and Celtic grey salt keep natural magnesium, calcium and potassium from the sea.
- Himalayan pink saltMined from ancient seabeds. Its color comes from iron, along with traces of other minerals.
- Refined table saltStripped down to almost pure sodium chloride, usually with anti-caking agents added.
Sodium itself is essential. It helps your body balance fluids and keeps nerves and muscles working. Unrefined salts carry trace minerals that refined salt loses, so we reach for them first, for flavor, texture and character.
